Easy, Healthy Energy Bites

As a family, we have been absolutely LOVING this healthy snack discovery. I've made these 'energy
bites' before (and they were scoffed down then) but we've got into the habit of having these to hand recently, and it's certainly helping us to stop reaching for the biscuits and chocolate - particularly now the kids are home all the time and requesting snacks every 3 minutes!

I've used the recipe below, which I've taken from the book 'Complete Wellness' by Neal's Yard Remedies (a fantastic resource which I can highly recommend).

Raw Fudge Bites

Dry Ingredients:

100g mixed nuts, 50g desiccated coconut

Wet Ingredients:

100g smooth peanut butter, 1tbsp coconut oil, 1tbsp runny honey, 1/2 tsp vanilla essence

For the topping:

10g desiccated coconut

Method:

Blitz the dry ingredients and transfer to a bowl. Add in the wet ingredients and combine. Roll into 3-4cm balls and roll in the topping (you don’t have to use coconut). Place on greaseproof paper and chill in the fridge for an hour. You can store these in an airtight container in the fridge for up to 3 days (although they may not be around that long!)

Another variation that we’ve been enjoying is Coconut and Lime bites. The method is the same as above for making them but with the following ingredients:

Dry Ingredients:

45g almonds, 45g cashew nuts, 110g pitted dates, 10g desiccated coconut

Wet Ingredients:

2 tbsp lime juice

For the topping:

10g desiccated coconut.
